As mentioned in the Slashfilm article, most DVD BTS these days are fluff pieces where everyone talks about how great they are. Every now and then, however, you get some really great 'Making Of's' about the process.

The doc on Magnolia and Matchstick Men come to mind. Both worthwhile if you haven't seen them.
